After the busy holiday season I realized that our freezer meals were dwindling down so I spent a Saturday preparing some quick and easy meals to restock it. One of the meals I made is this yummy, kid-friendly, one-pan Chicken Alfredo Pasta with Bacon and Broccoli.
I’m sure there are similar recipes out there with homemade Alfredo, but I’m sharing the cheaters method for busy moms like me. Grab a rotisserie chicken from Costco- they have the best rotisserie chickens around for only $4.99 – you can use the chicken for any recipe that calls for cooked chicken – and it makes preparing meals quick and easy.
1 box of Rotini pasta, cooked
2 Jars of Alfredo Sauce
3 cups of cooked chicken, diced
2 cups of broccoli, cooked
1 cup of bacon, cooked & diced
1 cup of shredded provolone/mozzarella cheese blend
Combine pasta, chicken and bacon in a casserole dish. Pour Alfredo sauce over noodle mixture and combine. Top with shredded cheese. Bake at 350 degrees for 25 minutes… or cover with foil and stick it in the freezer for later!
I split the ingredients into 2 casserole dishes to stretch the ingredients into two meals. Our family doesn’t eat a lot of pasta so we would pair this with a side salad, dinner roll or cooked vegetables. The below recipe makes 1 large casserole or you can split into two if you prefer to try it like we did.
Yum! The kids loved this dish and you could not tell it was a frozen meal! The salad pictured is the Sweet Kale Salad from Costo – one of my favorite salads! I don’t recommend leaving in your freezer longer than 3 months. We usually eat all our freezer meals before 30 days.
