If you like freezer cooking then you must try baking rice and freezing it! Baking rice may not be new to you – I first discovered how to bake rice about 5 years ago and have made rice this way ever since. My father-in-law is a chef and taught me this trick – which I now use when we cook for a large group, want to stock the freezer and I’m limited on time. Basmati rice freezes very well and is great to use later to make fried rice, cilantro-lime rice or rice pudding.
We like the basmati rice is from Costco (which you can also get here) – maybe you recognize the bag 🙂
We use a large baking casserole dish, rinse 4 cups of rice and place in the casserole dish with 2 Tbsp of chicken base, cover with enough water until it is 3/4 inch above the rice and add 1 & 1/2 Tbsp of olive oil.
Cover the dish with aluminum foil and bake at 425 degrees for 45 minutes, stir rice after 45 minutes then recover with foil and bake for another 30 minutes or until rice is cooked though.
You should have enough rice to feed a crowd or to freeze for a later date. I bag a few cups of rice in Ziploc freezer bags and write the date/contents with a sharpie marker on the outside. I recommend using frozen rice within 3 months.
